Fried Calamari
What you need:
1. One pound of calamari
2. Baking soda (2 tablespoon)
3. Sugar (2 tablespoon)
4. Lemon juice (1 lemon)
5. Bottle of beer (1)
6. Four-five tablespoon flour
7. Zip-lock bag
8. Bread crumbs (from 2-3 slices of bread)
9. Garlic (grated)
10. A handful of walnuts (grate them)
11. Four pinches of salt.
12. Four tablespoon yogurt
13. Olive oil, 1 tablespoon
How?
1. Wash the calamari well and cut them into 1/2 inch rings
2. Put the calamari in a bowl then add baking soda, sugar, lemon juice and just a pinch of salt on. Start squeezing them until they are tender, it takes at least 5 minutes.
3. Rinse well and put a bottle of beer on top and leave it in the fridge for at least 30 minutes. Five minutes before the end of time start heating your oil of choice.
4. Pour down the beer (unfortunately....) and dry them.
5. Put the flour and 2 pinches of salt in the zip-lock bag, then put the calamari in, blow air in the bag before you close it then start shaking and tossing for a minute or two.
6. Take out calamari, shake excess flour and put them on a dry surface.
7. Fry them for no more than 2 minutes, let them stay on a piece of paper (paper napkin etc) to get rid of excess oil.
The dipping sauce:
1. Mix bread crumbs, garlic, walnuts and a pinch of salt in a bowl.
2. Add yogurt and mix. The yogurt should not be too much, it is to keep the above mixture in a paste/dipping sauce format.
3. Add the olive oil and mix again.
